More info

Lemon balm, also called Melissa officinalis, is a very hardy aromatic and medicinal perennial plant that is incredibly easy to grow.
It is a plant which reaches 80 centimeters at the end of the year and which grows very well with tansy.
Its shape is erect, more or less ramose.
Its flowers are white in late summer.
The leaves of lemon balm are very fragrant.

Its leaves have a lemony flavor and are used for its digestive properties.
When you crumple its leaves, the essential oil contained inside gives off a very pleasant lemony smell.
In infusion, lemon balm offers a delicious herbal tea with many properties, just like lemon verbena or peppermint.

In cooking, it gives a fresh flavor to meats, poultry, fish, fruit and vegetable salads, soups and puddings.

Lemon balm is used in Spain to flavor milk.
It is used in the composition of certain liqueurs such as Bénédictine.
